I would like to get some input as to switching the Saturday's (Bike, Swim) to Sunday and moving the Sunday's Run(1:45), Bike (45) and Run(1:00) to Saturday...Is this a big no, no?.... as to the demands of running has on your body prior to a big ride.... Thoughts!

There's no problem switching the days like that - the order is generally a guideline based on experience and attempting to reflect the demands of race day. For example, you'll ride long when you're relatively fresh, and then you'll be fairly fatigued by the start of the run.
I'm also a little curious: You didn't mention why you needed to switch them (life can present all kinds of constraints, for sure). Is this a one-time switch or is it something you need to do more often?

I am in the same week and have been switching the weekends for the past month due to time constraints and family. I've been doing the long runs on Fri. before work and the long ride either Sat or Sun depending on what is going on. Is this a problem and should I keep them in their current order until race day?
On a side note, I missed the Swim / Run this week and paid for it today. I started the second run leg and got out half way and on the way back started getting cramps in my quad and was forced to walk the last 20 minutes or so. Could this be dehydration? I tried to pump in the fluid on the :45 bike.
Of course, this mentally effected me and my ability to complete the marathon. My goal is to be able to run in between the aid station for the marathon.
